WooCommerce is a commerce extension grafted onto WordPress, and that is both its strength and its constraint. Its strength: the store belongs to you, no commission is taken on your sales, and particular cases of pricing, delivery or tax can be handled because you have control over everything.
Its constraint: what hosted platforms take on for you — updates, security, payment compliance, availability at peak times — stays with you. On a store, those subjects are not theoretical: an outage on a busy day is counted in lost orders.
We keep it when control and reversibility weigh more than comfort, and when somebody can take on the upkeep. Otherwise we advise a hosted platform, and we say so straight.
